Salmon and Cauliflower Rice Bento Lunch is another fantastic option for a healthy lunch at home, work or school.
- 1 cooked salmon filet (skin removed (great use of leftovers, so cook extra salmon for supper!))
- 3/4 – 1 C cauliflower crumbles
- 3 Tablespoons vegetable broth
- 1/2 granny smith organic apple
- 1 1/2 C vegetables of choice (steamed)
- Sautee cauliflower crumbles with broth until soft, over medium heat
- All ingredients can be served and stored cold
- Package and add ice pack to enjoy at lunch
