Salmon and Cauliflower Rice Bento Lunch

Salmon and Cauliflower Rice Bento Lunch is another fantastic option for a healthy lunch at home, work or school.

Ingredients

  • 1 cooked salmon filet skin removed (great use of leftovers, so cook extra salmon for supper!)
  • 3/4 - 1 C cauliflower crumbles
  • 3 Tablespoons vegetable broth
  • 1/2 granny smith organic apple
  • 1 1/2 C vegetables of choice steamed

Instructions

  • Sautee cauliflower crumbles with broth until soft, over medium heat
  • All ingredients can be served and stored cold
  • Package and add ice pack to enjoy at lunch
