Salmon and Cauliflower Rice Bento Lunch is another fantastic option for a healthy lunch at home, work or school.

  • 1 cooked salmon filet (skin removed (great use of leftovers, so cook extra salmon for supper!))
  • 3/4 – 1 C cauliflower crumbles
  • 3 Tablespoons vegetable broth
  • 1/2 granny smith organic apple
  • 1 1/2 C vegetables of choice (steamed)
  1. Sautee cauliflower crumbles with broth until soft, over medium heat
  2. All ingredients can be served and stored cold
  3. Package and add ice pack to enjoy at lunch
