Peach Parfait
Here is a simple dessert that packs in protein and satisfies the sweet tooth.
- 1 peach (pealed and chopped)
- 1/2 cup plain organic greek yogurt
- 1/4 tsp stevia powder or liquid
- 2 Tablespoons nuts
- 2 Tablespoons oats
- 1/2 tsp coconut oil
- optional: small pinch of salt (additional 1/8 tsp stevia)
- Layer bottom or container with diced peaches
- Mix 1/4 tsp stevia into yogurt and mix well.
- Scoop a layer of yogurt on top of the peaches and repeat once more with peaches and stevia sweetened yogurt
- On a pan on the stove, toast coconut oil, nuts, and oats together over medium heat for 3 minutes, stirring 3 times. Optional add salt and additional stevia to nut and oat mixture, or toast this mixture at 325 for 20 minutes.
- Top yogurt with nut/oat toasted mixture and serve.
Multiply the recipe for as many people as you are serving.
