Green egg scramble

  1. 2 large organic eggs
  2. 1 tsp avocado, walnut, or olive oil
  3. 1/4 tsp dried basil or oregano or 1 Tbsp fresh herbs
  4. 1/2 Cup finely chopped kale
  5. 1 Tbsp sliced scallions
  6. 1 Tbsp diced red pepper
  7. sea salt and pepper to taste
  1. Beat ingredients together. heat over medium low heat while stirring aprox 3-4 minutes, or until eggs are cooked and greens have wilted
