  • 2 large organic eggs
  • 1 tsp avocado walnut, or olive oil
  • 1/4 tsp dried basil or oregano or 1 Tbsp fresh herbs
  • 1/2 Cup finely chopped kale
  • 1 Tbsp sliced scallions
  • 1 Tbsp diced red pepper
  • sea salt and pepper to taste


  • Beat ingredients together. heat over medium low heat while stirring aprox 3-4 minutes, or until eggs are cooked and greens have wilted
