Open Face Sandwich

Ingredients

  • 1 slice ezekial bread
  • 2 Tablespoons of hummus + 1 Tablespoon avocado mixed in
  • 1/2 Cup spinach leaves
  • 1/2 Cup sliced tomatoes
  • Balsamic vinegar mixed with olive oil to taste

Instructions

  • Soak the tomatoes or toss in the balsamic/olive oil mixture (optional) and top this simple sandwich with the hummus, spinach, and tomatoes. Enjoy a quick summer lunch.
Open Face Sandwich is a great summer quick meal.
