Multi Grain Ezekiel Bread, Egg whites, Greens, and Pico de Gallo
- 1 slice Ezekiel Multi Grain Bread
- 2 large egg whites
- 1 cup spinach – raw (it will wilt down to a much smaller amount)
- 2 tablespoons Pico De Gallo
- In a large pan over medium – low heat, scramble egg whites in 1 tsp olive oil, warm bread, and wilt spinach all at the same time, in the same pan. This meals goes together quickly. Stack, and top with Pico de Gallo and 1/2 tablespoon of optional Feta cheese. Enjoy!
This speedy and delicious quick meal packs in over 11g of protein, 4-5g of fiber, and less than 3g of sugar (depending on bread brand utilized). Additionally, you receive a wonderful variety of minerals and nutrients from this combination of grains, seeds, egg, and vegetables. The serving size above is actually quite small, but if served with a fresh green smoothie, it makes a satisfying meal. You can certainly add a second egg white, more spinach, and more Pico, however.
