Herb Crusted Fish
- 4 slices Ezekiel Bread
- Chopped Flat-leaf parsley and chives
- Lemon zest
- 2 tbsp extxra virgin olive oil
- Pepper (to taste)
- 4 white fish fillets
- Lemon wedges (to serve)
- Preheat oven to 420 degrees F
- In food processor, combine bread and herbs. Mix in the oil and lemon
- Salt and pepper to taste
- Put the filets on lightly oiled baking dish and coat, evenly, with crumb mixture
- Bake 10-15 minutes. Fish should be cooked through and topping golden brown
- Serve with lemon and salad
