Herb Crusted Fish

  • 4 slices Ezekiel Bread
  • Chopped Flat-leaf parsley and chives
  • Lemon zest
  • 2 tbsp extxra virgin olive oil
  • Pepper (to taste)
  • 4 white fish fillets
  • Lemon wedges (to serve)
  1. Preheat oven to 420 degrees F
  2. In food processor, combine bread and herbs. Mix in the oil and lemon
  3. Salt and pepper to taste
  4. Put the filets on lightly oiled baking dish and coat, evenly, with crumb mixture
  5. Bake 10-15 minutes. Fish should be cooked through and topping golden brown
  6. Serve with lemon and salad
