- 9 organic egg whites
- 1 pound lean ground turkey
- 2 cups shredded spinach
- 2 roma tomatoes (coarsely chopped)
- 1 clove garlic minced
- Sea salt and black pepper to taste
- Cook ground turkey in a medium skillet until done and lightly browned. Drain excess juices from the pan. Place turkey in a bowl and set aside. Wipe the pan clean with a paper towel and scramble the egg whites until dry. Add scrambled eggs to cooked turkey. In a small skillet coated with non fat cooking spray lightly sauté tomatoes, spinach and garlic. In a large skillet combine all ingredients and mix until evenly distributed. Season with salt and pepper and serve immediately.
