Deviled Eggs with Avocado for another Ketogenic Diet option.
- 6 large organic eggs
- 1 tablespoon of extra virgin olive oil
- ¼ teaspoon of yellow mustard
- 1/2 avocado (pitted and peeled)
- Salt & pepper to taste
- Bring eggs to boil over medium/high heat
- Boil 1 minute, covered
- Turn off heat and leave covered for 15 minutes
- Plunge eggs into ice and water and peel when cool to touch
- Slice length wise and scoop yolks into mixing bowl with avocado, mustard, oil
- Mix or blend ingredients together well and salt / pepper to taste
- Scoop spoonful of mixture into each half egg, or decorate with icing bag
- Enjoy
Optional flavors can be added such as hot pepper, cumin, fresh herbs chopped finely, cilantro
