Devil Eggs with Avocado

Deviled Eggs with Avocado for another Ketogenic Diet option.

  • 6 large organic eggs
  • 1 tablespoon of extra virgin olive oil
  • ¼ teaspoon of yellow mustard
  • 1/2 avocado (pitted and peeled)
  • Salt & pepper to taste
  1. Bring eggs to boil over medium/high heat
  2. Boil 1 minute, covered
  3. Turn off heat and leave covered for 15 minutes
  4. Plunge eggs into ice and water and peel when cool to touch
  5. Slice length wise and scoop yolks into mixing bowl with avocado, mustard, oil
  6. Mix or blend ingredients together well and salt / pepper to taste
  7. Scoop spoonful of mixture into each half egg, or decorate with icing bag
  8. Enjoy

Optional flavors can be added such as hot pepper, cumin, fresh herbs chopped finely, cilantro
