Chicken Avocado Soup with Lime

  • 1 avocado (diced and peeled)
  • ½ lb chicken breasts (boneless skinless, sliced)
  • 24 fl oz organic veggie broth
  • ½ small bunch cilantro (cleaned and chopped)
  • 2 cloves garlic (minced)
  • 1 jalapeño pepper (de-seeded and chopped)
  • 1 lime (1/2 juiced, half cut into wedges)
  • 2 to matoes (diced)
  • 1/4 tsp black pepper
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 tablespoon virgin coconut oil
  1. Heat a medium saucepan over medium heat.
  2. Add oil to the saucepan and swirl to coat bottom. Add the onion and jalapeño. Cook, stirring frequently, until tender, 2-3 minutes.
  3. Add the garlic and tomatoes to the saucepan. Cook for about 1 minute.
  4. Add the broth, cumin, salt, and pepper to the saucepan. Add chicken and bring to a boil. Then reduce the heat back to medium, cover, and cook until chicken is cooked through, 8-10 minutes. Once cooked, remove chicken from the liquid and transfer to a plate.
  5. Shred or dice the chicken and return to the saucepan. Stir in about ¾ of the cilantro (save the rest for garnishing) and lime juice.
  6. Serve soup in a bowl, stir in the avocado, and garnish with the remaining cilantro and lime wedges
