
Easy Chicken Stir Fry
- 1 whole chicken breast (skinless, boneless)
- 2 tsp extra virgin olive oil or avocado oil
- 1 small onion (sliced)
- 1 cup brocooli (chopped)
- 1/2 cup carrots sliced
- 1 cup cabbage sliced
- 1/2 cup snow snap peas
- 1/2 red pepper (sliced)
- 1/2 tsp sesame oil
- lemon or lime optional
- Cook chicken in pan over medium heat with tsp of oil until chicken registers 165 F.
- In second pan, bring wok or skillet to medium/high heat and add additional tsp oil
- Vegetables will saute quickly
- Seseme oil can be added toward end of saute, as can tamari soy sauce
- Season with fresh lemon or lime, optional
