Chicken Avocado Soup with Lime
- 1 avocado (diced and peeled)
- ½ lb chicken breasts (boneless skinless, sliced)
- 24 fl oz organic veggie broth
- ½ small bunch cilantro (cleaned and chopped)
- 2 cloves garlic (minced)
- 1 jalapeño pepper (de-seeded and chopped)
- 1 lime (1/2 juiced, half cut into wedges)
- 2 to matoes (diced)
- 1/4 tsp black pepper
- 1 tsp cumin
- 1/2 tsp salt
- 1 tablespoon virgin coconut oil
- Heat a medium saucepan over medium heat.
- Add oil to the saucepan and swirl to coat bottom. Add the onion and jalapeño. Cook, stirring frequently, until tender, 2-3 minutes.
- Add the garlic and tomatoes to the saucepan. Cook for about 1 minute.
- Add the broth, cumin, salt, and pepper to the saucepan. Add chicken and bring to a boil. Then reduce the heat back to medium, cover, and cook until chicken is cooked through, 8-10 minutes. Once cooked, remove chicken from the liquid and transfer to a plate.
- Shred or dice the chicken and return to the saucepan. Stir in about ¾ of the cilantro (save the rest for garnishing) and lime juice.
- Serve soup in a bowl, stir in the avocado, and garnish with the remaining cilantro and lime wedges
