Similar to tsaziki sauce, it’s sour, The Bulgarian Chilled Yogurt Cucumber Soup is salty, creamy and incredibly refreshing.
Bulgarian Chilled Yogurt Cucumber Soup
- 1 English cucumber (cut into small cubes)
- 2 small garlic cloves (finely chopped)
- ½ cup fresh dill (finely chopped)
- 2½ cups plain yogurt
- 1 tbsp fresh lemon juice
- ⅓ cup water
- 2 tsp kosher salt
- 1 tbsp extra virgin olive oil
- walnuts (chopped *optional)
- lemon wedges *optional
- Put all the ingredients in a mixing bowl except the walnuts and lemon wedges and mix well.
- Add more water if you prefer thinner consistency.
- Refrigerate and serve chilled with walnuts and lemon wedges.
