Apple Pie Almond Protein Muffin

  • 1 1/4 cup almond flour
  • 3 scoops Vanilla Protein Powder
  • 3 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 11/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 egg whites
  • 1/2 cup plain organic Greek Yogurt
  • 1 cup unsweetened applesauce
  • 1/4 erythritol crystals
  • 1 teaspoon vanilla extract
  • 1 cup medium size green tart apple (cored and finely chopped)
  1. Preheat oven to 350°.
  2. Combine egg whites, yogurt, applesauce, erythrtiol, vanilla extract and apple pieces. Mix together.
  3. Add almond meal, vanilla whey protein powder, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. Combine flour mix and egg mix together until smooth.
  5. Fill each tin 3/4 of the way full, spreading evenly.
  6. Bake for 20 minutes.
  7. Let cool before serving.
