This is a delicious mix of fresh vegetables and spices lightly pan-fried with olive oil.

Veggie Sauté
- 2 red bell peppers (sliced into 1 inch wide strips)
- 2 zucchini (sliced lengthwise and chopped into ¼” pieces)
- 2 onions (sliced into half rings)
- 1 cup brown rice cooked
- 1/3 cup olive oil
- Salt and pepper to taste
- Plain Greek or soy yogurt (optional)
- Add olive oil to wok and heat on medium-high. Add onions and sauté until caramelized (approx. 5 minutes).
- Add red bell peppers, salt, and pepper and cover for about 10 minutes- stirring every few minutes. If you notice vegetables are browning too quickly reduce heat.
- Add zucchini and cover for another 10 minutes- stirring every few minutes.
- While vegetables are cooking, prepare brown rice per instructions on package.
- Total cook time ranges from 20-30 minutes depending on desired doneness of vegetables- longer cooking time will result in softer vegetables.
- Once veggies are cooked to desired doneness, pour over brown rice, add a dollop of Greek yogurt (optional), and serve.
