Veggie Fries
- Per batch (choose 6 large carrots, peeled and sliced or 4 medium zucchini sliced or 4 large red peppers, sliced)
- 2 Tablespoon extra virgin olive oil
- pinch of salt
- optional chilli powder (pepper, or seasoning of choice)
- Preheat oven to 425
- Slice vegetables length wise
- Add olive oil, seasoning, and salt to a medium bowl
- Toss in oil mixture until they are evenly coated
- Place fries on a parchment lined cookie sheet
- Cook fries at 425 for 10 minutes
- Remove fries from oven and flip them
- Increase oven heat to 450 and cook for an additional 10 minutes (or until crispy)
- Let cool for 10 minutes
