Baked Veggie Fries

Veggie Fries

  • Per batch (choose 6 large carrots, peeled and sliced or 4 medium zucchini sliced or 4 large red peppers, sliced)
  • 2 Tablespoon extra virgin olive oil
  • pinch of salt
  • optional chilli powder (pepper, or seasoning of choice)
  1. Preheat oven to 425
  2. Slice vegetables length wise
  3. Add olive oil, seasoning, and salt to a medium bowl
  4. Toss in oil mixture until they are evenly coated
  5. Place fries on a parchment lined cookie sheet
  6. Cook fries at 425 for 10 minutes
  7. Remove fries from oven and flip them
  8. Increase oven heat to 450 and cook for an additional 10 minutes (or until crispy)
  9. Let cool for 10 minutes
