Vegetarian Quinoa Chilli
- • 1 cup quinoa (rinsed)
- • 2 tablespoon olive oil
- • 1 small avocado
- • 1 cloves garlic (minced)
- • 1 large carrot (peeled and chopped)
- • 1 red bell pepper (chopped)
- • 2 can red kidney beans (drained and rinsed)
- • 1 can tomato sauce
- • 1-2 tablespoons chili powder (depending on your taste)
- • 1 tablespoon ground cumin
- • Fresh cilantro (chopped)
- • Salt and pepper to taste
- Wash quinoa to remove saponins. Chop the carrot and pepper.
- In a large pot, heat the olive oil. Add the onion and garlic and cook until translucent, about 2-3 minutes. Stir in the carrot and peppers and cook about 3-4 minutes.
- Add the quinoa, kidney beans and tomato sauce. Season with chili powder, cumin and salt. Simmer the chilli for about 20 minutes and add water if it gets dry. Serve warm.
- Garnish with avocado slices.
