Soothing Soup
- 32 oz vegetable stock (organic)
- 1 small onion (sliced)
- 2 large carrots (sliced)
- 2 Cups broccoli pieces
- 2 Cups diced squash
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
- Add all ingredients to broth and cook over medium heat for 2 hours
- Top with fresh parsley, optional
