Poached Peaches

Ingredients

  • 6 oz can frozen unsweetened apple juice concentrate thawed
  • 2 C water
  • 1 Tbsp grated lemon peel
  • 1 tsp vanilla extract
  • 4 medium ripe peaches or nectarines
  • 4 sprigs mint for garnish

Instructions

  • In medium saucepan, mix juice, water, lemon peel, and vanilla. Bring to boil and reduce heat. Cover and simmer for 10 minutes. Add peaches, partially covered, over low heat for 7-8 minutes. Remove from heat and allow to cool in liquid. When cool, carefully slip skins off peaches, cut in half and remove pits. Arrange and garnish with mint.
