Poached Peaches

  • 6 oz can frozen unsweetened apple juice concentrate (thawed)
  • 2 C water
  • 1 Tbsp grated lemon peel
  • 1 tsp vanilla extract
  • 4 medium ripe peaches or nectarines
  • 4 sprigs mint for garnish
  1. In medium saucepan, mix juice, water, lemon peel, and vanilla. Bring to boil and reduce heat. Cover and simmer for 10 minutes. Add peaches, partially covered, over low heat for 7-8 minutes. Remove from heat and allow to cool in liquid. When cool, carefully slip skins off peaches, cut in half and remove pits. Arrange and garnish with mint.
