This delicious salad is a great dish to serve to guests, but it’s also a wonderful way to get more vegetables into your week. Make a large batch and take some each day.
- 3 carrots (washed and cut into match-stick pieces)
- 1 apple (washed and chopped)
- 3-4 kohlrabi bulbs (trimmed, peeled and chopped)
- 1 medium zucchini (washed and chopped)
- 1/2 cup sprouts
- chopped parsley or mint
Whisk together the following for the dressing
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1/2 tsp stevia liquid (natural stevia)
- 3 tablespoons extra virgin olive oil
- Chop the vegetables and top with the dressing mixture.
