Grain Free Carrot Muffin
- 1 1/4 cups almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 3 organic egg whites (room temperature)
- 1/3 cup unsweetened organic applesauce
- 1/4 cup 106 grams honey
- 3/4 cup 50 grams grated carrots
- Mix ingredients together, pour into lined muffin tins and bake at 350 degrees F for 17-20 minutes, or until muffins bounce back with touch, and come clean with toothpick.
