This delightful Almond Pear Gratin is a gluten-free dessert that combines the nuttiness of almonds with the natural sweetness of ripe pears. Perfectly suited for any occasion, this recipe is quick to prepare and sure to impress.

Ingredients

  • 2/3 cup (150g) grass-fed butter, at room temperature (+ extra for greasing the dish)
  • 2 tbsp monk fruit sweetener
  • 1/4 tsp salt
  • 1 1/2 cups (155g) ground almonds (almond meal or almond flour)
  • 3 large eggs, at room temperature
  • 1/4 tsp almond extract
  • 4 to 5 large pears, peeled, cored, and thinly sliced
  • 1 tbsp powdered monk fruit sweetener (optional)
Tip: To make powdered monk fruit sweetener at home, place monk fruit sweetener in a blender and process until fine and powdery.

Instructions

  1. Prepare the baking dish: Preheat your oven to 350°F (180°C). Grease a shallow baking dish generously with grass-fed butter.
Tip: Use a ceramic or glass baking dish for even heat distribution.
  2. Mix the almond batter: In a large mixing bowl, combine the softened butter, monk fruit sweetener, and salt. Mix until smooth. Add the ground almonds, eggs, and almond extract. Stir until the batter is fully combined and smooth.
Tip: Use a whisk or hand mixer for a fluffier batter.
  3. Arrange the pears: Spread the almond batter evenly across the bottom of the greased baking dish. Arrange the pear slices over the batter in a circular pattern or any design you prefer, slightly overlapping them.
Tip: Choose ripe but firm pears for the best texture and flavor.
  4. Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the gratin is golden on top and slightly puffed. A toothpick inserted into the almond layer should come out clean.
Note: If the top begins to brown too quickly, cover the dish loosely with aluminum foil.
  5. Optional finishing touch: If desired, dust the baked gratin with the powdered monk fruit sweetener for an extra touch of sweetness and elegance.
Tip: Sift the powdered monk fruit sweetener for an even and delicate dusting.
  6. Serve: Let the gratin cool slightly before serving. Enjoy warm or at room temperature.
Tip: Pair with a dollop of unsweetened whipped cream or a scoop of coconut ice cream for an indulgent treat.

Note: This recipe is vegetarian as it does not contain meat, poultry, or fish, but it does include eggs and butter, which are not suitable for a vegan diet.
