Green egg scramble
Eggs and Greens
- 2 large organic eggs
- 1 tsp avocado (walnut, or olive oil)
- 1/4 tsp dried basil or oregano or 1 Tbsp fresh herbs
- 1/2 Cup finely chopped kale
- 1 Tbsp sliced scallions
- 1 Tbsp diced red pepper
- sea salt and pepper to taste
- Beat ingredients together. heat over medium low heat while stirring approx. 3-4 minutes, or until eggs are cooked and greens have wilted
