Spicy Nutty Oat Cookies
A healthier dessert option, perfect for fall.
- 1 C nut butter of choice (I had unsweetened peanut on hand)
- 1 C ground pecans
- 1 C gluten free quick oats
- 1 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp salt
- 1 egg
- 1/2 C coconut oil
- 1/4 C honey
- 1/2 tsp stevia liquid
- 1 tsp vanilla
- 1 tsp baking powder
- Combine ingredients with hand mixer and scoop onto stoneware cookie sheets. Bake at 350 degrees F for 12-15 minutes, or until lightly browned.
I could have gone with even less sweetener than calle for above.
