Veggie Sauté

This is a delicious mix of fresh vegetables and spices lightly pan-fried with olive oil.

Veggie Sauté

  • 2 red bell peppers (sliced into 1 inch wide strips)
  • 2 zucchini (sliced lengthwise and chopped into ¼” pieces)
  • 2 onions (sliced into half rings)
  • 1 cup brown rice cooked
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • Plain Greek or soy yogurt (optional)
  1. Add olive oil to wok and heat on medium-high. Add onions and sauté until caramelized (approx. 5 minutes).
  2. Add red bell peppers, salt, and pepper and cover for about 10 minutes- stirring every few minutes. If you notice vegetables are browning too quickly reduce heat.
  3. Add zucchini and cover for another 10 minutes- stirring every few minutes.
  4. While vegetables are cooking, prepare brown rice per instructions on package.
  5. Total cook time ranges from 20-30 minutes depending on desired doneness of vegetables- longer cooking time will result in softer vegetables.
  6. Once veggies are cooked to desired doneness, pour over brown rice, add a dollop of Greek yogurt (optional), and serve.
