Vegetable Dal Curry

  • 2 tsp olive oil or avocado oil
  • 1/2 Cup chopped onion
  • 1 tsp turmeric powder
  • 1/4 tsp coriander powder
  • dash of cumin
  • 1 carrot sliced
  • 1 Cup cauliflower pieces
  • 1/3 Cup lentils red
  • 1 Cup water
  • salt to taste


  • Heat oil and add onion, turmeric, coriander, and cumin. Saute.
  • Add cauliflower and carrot, stir to coat.
  • Add red lentils and water.
  • Bring to boil, reduce heat, simmer 40 minutes.
