Vegetable Dal Curry

Ingredients
  1. 2 tsp olive oil or avocado oil
  2. 1/2 Cup chopped onion
  3. 1 tsp turmeric powder
  4. 1/4 tsp coriander powder
  5. dash of cumin
  6. 1 carrot, sliced
  7. 1 Cup cauliflower pieces
  8. 1/3 Cup lentils (red)
  9. 1 Cup water
  10. salt to taste
Instructions
  1. Heat oil and add onion, turmeric, coriander, and cumin. Saute.
  2. Add cauliflower and carrot, stir to coat.
  3. Add red lentils and water.
  4. Bring to boil, reduce heat, simmer 40 minutes.
