
Vegetable Dal Curry
- 2 tsp olive oil or avocado oil
- 1/2 Cup chopped onion
- 1 tsp turmeric powder
- 1/4 tsp coriander powder
- dash of cumin
- 1 carrot (sliced)
- 1 Cup cauliflower pieces
- 1/3 Cup lentils (red)
- 1 Cup water
- salt to taste
- Heat oil and add onion, turmeric, coriander, and cumin. Saute.
- Add cauliflower and carrot, stir to coat.
- Add red lentils and water.
- Bring to boil, reduce heat, simmer 40 minutes.
