
This colorful summer salad delivers a wonderful flavor combination and serves as a perfect side for any grilled meal this summer.
Summer Salad
- 2 cucumbers (cleaned and diced)
- 4 medium tomatoes (cleaned and diced)
- 1/4 onion of chocie (sliced thinly)
- 5 radishes (sliced)
- 1 lemon
- 1 teaspoon chia seeds
- 1/4 cup water
- 1 tablespoon cider vinegar
- 1/2 tsp mustard
- gently mix vegetables together in bowl
- set aside
- stir together the water, vinegar, mustard, chia and juice of 1 lemon
- toss the vegetables with the dressing mix and let sit, refrigerated, at least 2 hours before serving
Optional garnish, additional lemon wedges and mint
