Ingredients
  1. 2 cucumbers, cleaned and diced
  2. 4 medium tomatoes, cleaned and diced
  3. 1/4 onion of chocie, sliced thinly
  4. 5 radishes, sliced
  5. 1 lemon
  6. 1 teaspoon chia seeds
  7. 1/4 cup water
  8. 1 tablespoon cider vinegar
  9. 1/2 tsp mustard
Instructions
  1. gently mix vegetables together in bowl
  2. set aside
  3. stir together the water, vinegar, mustard, chia and juice of 1 lemon
  4. toss the vegetables with the dressing mix and let sit, refrigerated, at least 2 hours before serving

  1. Optional garnish, additional lemon wedges and mint
