Summer Salad

This colorful summer salad delivers a wonderful flavor combination and serves as a perfect side for any grilled meal this summer.

Summer Salad

  • 2 cucumbers (cleaned and diced)
  • 4 medium tomatoes (cleaned and diced)
  • 1/4 onion of chocie (sliced thinly)
  • 5 radishes (sliced)
  • 1 lemon
  • 1 teaspoon chia seeds
  • 1/4 cup water
  • 1 tablespoon cider vinegar
  • 1/2 tsp mustard
  1. gently mix vegetables together in bowl
  2. set aside
  3. stir together the water, vinegar, mustard, chia and juice of 1 lemon
  4. toss the vegetables with the dressing mix and let sit, refrigerated, at least 2 hours before serving
