This colorful summer salad delivers a wonderful flavor combination and serves as a perfect side for any grilled meal this summer.

  • 2 cucumbers cleaned and diced
  • 4 medium tomatoes cleaned and diced
  • 1/4 onion of chocie sliced thinly
  • 5 radishes sliced
  • 1 lemon
  • 1 teaspoon chia seeds
  • 1/4 cup water
  • 1 tablespoon cider vinegar
  • 1/2 tsp mustard


  • gently mix vegetables together in bowl
  • set aside
  • stir together the water, vinegar, mustard, chia and juice of 1 lemon
  • toss the vegetables with the dressing mix and let sit, refrigerated, at least 2 hours before serving


Optional garnish, additional lemon wedges and mint
