
Simple Leftover Chicken Salad
- 1 chicken breast (cooked and cooled)
- 1/3 cup cooked and cooled quinoa (cook in vegetable stock for easy and flavorful quinoa)
- 1/2 bag (or one serving, organic greens of choice, pre washed)
- 1 large tomato (sliced)
- 1/2 avocado sliced and peeled
- Prepare quinoa and chicken for a meal the night prior and plan ahead to have leftovers of this simple and pleasing dish. Top with lemon and balsamic vinegar mixed with olive oil.
Prepare quinoa by adding 2 cups of vegetable broth to 1 cup of quinoa and brining to boil then simmering for 20-30 minutes, until all quinoa is open. Cool for salad. Remember that quinoa does require rinsing to remove outer coating. Some quinoa sold in stores is already rinsed, but if yours is not, please rinse well.
Very easy to make, and easy to take for a healthy meal on the go.
