Shrimp Cilantro Lime Salad

Servings 4


  • 1 lb large shrimp peeled and deveined
  • 3 Tablespoons lime juice
  • 1/2 C extra virgin olive oil
  • 1/4 C packed chopped cleaned, cilantro
  • 9 C lettuce mix of choice cleaned and chopped
  • 3 Tomatoes choped
  • salt and pepper to taste


  • Grill or saute shrimp until cooked
  • Whisk juice, oil, cilantro and add salt and pepper to taste.
  • Serve lettuce, top with dressing, top with shrimp and tomatoes
