
Summer Shrimp Cilantro Lime Salad
Shrimp Cilantro Lime Salad
- 1 lb large shrimp (peeled and deveined)
- 3 Tablespoons lime juice
- 1/2 C extra virgin olive oil
- 1/4 C packed chopped (cleaned, cilantro)
- 9 C lettuce mix of choice (cleaned and chopped)
- 3 Tomatoes (choped)
- salt and pepper to taste
- Grill or saute shrimp until cooked
- Whisk juice, oil, cilantro and add salt and pepper to taste.
- Serve lettuce, top with dressing, top with shrimp and tomatoes
