Summer Shrimp Cilantro Lime Salad

Shrimp Cilantro Lime Salad

  • 1 lb large shrimp (peeled and deveined)
  • 3 Tablespoons lime juice
  • 1/2 C extra virgin olive oil
  • 1/4 C packed chopped (cleaned, cilantro)
  • 9 C lettuce mix of choice (cleaned and chopped)
  • 3 Tomatoes (choped)
  • salt and pepper to taste
  1. Grill or saute shrimp until cooked
  2. Whisk juice, oil, cilantro and add salt and pepper to taste.
  3. Serve lettuce, top with dressing, top with shrimp and tomatoes
