
Pumpkin Spice Latte
- 2 cups Coffee (strong and fresh brewed)
- 1 cup Unsweetened Almond Milk (organic)
- 1/4 cup Pumpkin Puree
- 1 tsp. Pumpkin Pie Spice Blend (or cinnamon)
- 1 tsp. Vanilla Extract
- 2 tbsp. extra virgin Coconut Oil
- 15 drops Liquid Stevia
- While coffee is brewing, warm all ingredients, except stevia, in a pot on the stove over low/medium heat. When it warms and begins to bubble, add coffee and remove from heat. Blend with stick/wand blender and add stevia. Mix and serve.
To create a froth topping, use a milk frother or whisk to whip up 1/4-1/3 Cup additional almond milk and spoon to top of cup. For a thicker and fluffier topping, use organic coconut milk. Dust with cinnamon or pumpkin pie spice, optional.
