Peach Parfait

Here is a simple dessert that packs in protein and satisfies the sweet tooth.

  • 1 peach (pealed and chopped)
  • 1/2 cup plain organic greek yogurt
  • 1/4 tsp stevia powder or liquid
  • 2 Tablespoons nuts
  • 2 Tablespoons oats
  • 1/2 tsp coconut oil
  • optional: small pinch of salt (additional 1/8 tsp stevia)
  1. Layer bottom or container with diced peaches
  2. Mix 1/4 tsp stevia into yogurt and mix well.
  3. Scoop a layer of yogurt on top of the peaches and repeat once more with peaches and stevia sweetened yogurt
  4. On a pan on the stove, toast coconut oil, nuts, and oats together over medium heat for 3 minutes, stirring 3 times. Optional add salt and additional stevia to nut and oat mixture, or toast this mixture at 325 for 20 minutes.
  5. Top yogurt with nut/oat toasted mixture and serve.

Multiply the recipe for as many people as you are serving.
