Hummus and Vegetable Lunch

Easy to make in advance and take to work, school, or to eat for a safe quick meal at home.


  • 1 - 2 C leafy greens of choice
  • 1/2 cucumber sliced
  • 1 Tablespoon pumpkin seeds
  • 3/4 C cherry tomatoes
  • Onions to taste
  • 1/4 C carrots
  • 1/4 C hummus
  • 1/4 C garbanzo beans
  • 1 tablespoon optional extra virgin olive oil salt, pepper to taste


  • Layer ingredients and pack in advance for a healthy and filling lunch to go
