
Grilled Portabella Mushroom Reuben
- 2 portabella mushrooms
- 1 Tbsp extra virgin olive oil or avocado oil
- 1/4 Cup fresh sauerkraut
- 1 sliced tomato
- 1/2 avocado sliced thinly
- 2 large lettuce leaves
- Preheat grill or broiler oven to 325 F. Rinse mushrooms then baste with oil.
- Grill/broil for aprox 15-20 minute, turning and checking often to avoid charring
- Remove and place on lettuce leaves. Divide kraut and scoop into middle of mushrooms
- Garnish with tomato and avocado
