Grilled Portabella Mushroom Reuben

  1. 2 portabella mushrooms
  2. 1 Tbsp extra virgin olive oil or avocado oil
  3. 1/4 Cup fresh sauerkraut
  4. 1 sliced tomato
  5. 1/2 avocado sliced thinly
  6. 2 large lettuce leaves
  1. Preheat grill or broiler oven to 325 F. Rinse mushrooms then baste with oil.
  2. Grill/broil for aprox 15-20 minute, turning and checking often to avoid charring
  3. Remove and place on lettuce leaves. Divide kraut and scoop into middle of mushrooms
  4. Garnish with tomato and avocado
