
A delicious combination of grilled chicken and zucchini that can be mixed with a variety of other ingredients to make a healthful and filling meal.
Grilled Chicken and Vegetables
- 1 lb boneless skinless chicken breast (scored)
- Juice of 1 lemon
- 1 clove garlic (minced)
- 1 tsp avocado oil (or other high smoke point natural oil)
- salt and pepper (pinch of each)
- 1 tablespoon avocado oil (or other high smoke point oil for vegetables)
- 3 zucchini (sliced thick)
- 3 medium tomatoes (sliced in half for grilling face down)
- 3 yellow squash (sliced thick)
- Mix lemon juice, garlic, 1 tsp oil and salt/pepper. add to chicken breast and let marinade for at least 2 hours.
- Grill chicken until cooked through, flipping half way through process
- Place lightly oiled vegetables on grill, in grill basket, on scewer, or on foil and grill for aprox 4 mintues on each side, or unitl tender
