
Breakfast can be fun and healthy with this simple idea.
Egg In a Pepper
- 1 red pepper
- 2 eggs or 4 egg whites
- salt and pepper
- Preheat oven to 400 degrees. Slice the red pepper into 3/4″ thick slices. Lay the two largest slices on a baking sheet lined with parchment paper. Save the remaining red pepper slices for another recipe.
- Crack an egg in the center of each of the red pepper slices. Salt and pepper to taste.
- Bake in preheated oven for 7-9 minutes, or until the whites of the eggs are fully cooked, and the center yolks are cooked to your preference.
