Egg In a Pepper

Breakfast can be fun and healthy with this simple idea. 

Egg In a Pepper

  • 1 red pepper
  • 2 eggs or 4 egg whites
  • salt and pepper
  1. Preheat oven to 400 degrees. Slice the red pepper into 3/4″ thick slices. Lay the two largest slices on a baking sheet lined with parchment paper. Save the remaining red pepper slices for another recipe.
  2. Crack an egg in the center of each of the red pepper slices. Salt and pepper to taste.
  3. Bake in preheated oven for 7-9 minutes, or until the whites of the eggs are fully cooked, and the center yolks are cooked to your preference.
