Creamy Zucchini Soup
Perfect for summer.
- 1 small onion (quartered)
- 2 cloves garlic
- 3 medium large zucchini (cleaned with skin on and cut in large chunks)
- 32 oz reduced sodium vegetarian broth
- 2 tbsp plain greek yogurt
- kosher salt and black pepper to taste
- Combine all ingredients except yogurt and bring to boil. Reduce heat to simmer for 20 minutes. Blend with stick blender, add yogurt, and blend again. Serve.
