Chopped Veggie Salad

Ingredients

  • 3 Medium Tomatoes chopped
  • 2 English Cucumbers chopped (peeled if preferred)
  • 1 Cup chopped purple cabbage
  • 1 Cup chopped carrots
  • 1/2 small chopped onion
  • 1/4 th Cup extra virgin olive oil
  • 1 Tablespoon apple cider vinegar
  • 1/4 tsp oregano
  • pinch of thyme powder
  • salt and pepper to taste

Instructions

  • Stir ingredients together, chill and enjoy
